1 pound ground turkey

2 tablespoons grated onion

1 teaspoon chili powder

1 teaspoon garlic powder

1 teaspoon kosher salt

1/2 teaspoon ground coriander

1/2 teaspoon ground cumin

1/4 teaspoon freshly ground black pepper

2 tablespoons olive oil

4 slices Monterey Jack cheese

4 potato buns

Blue corn tortilla chips, for serving

Pickled jalapenos, for serving

Pico de gallo, for serving

Guacamole, for serving

  1. Add the turkey, onion, chili powder, garlic power, salt, coriander, cumin and pepper to a bowl and stir until combined. Shape the mixture into 4 burgers and refrigerate for 30 minutes.
  2. Heat the oil in a cast-iron skillet over medium-high heat. Add the burgers and cook for about 5 minutes; flip and cook until the internal temperature registers 165 degrees F, another 4 to 5 minutes, topping the burgers with the cheese in the last 2 minutes.
  3. Transfer the burgers to the buns and top with tortilla chips, pickled jalapenos, pico de gallo and guacamole.
