  1. In a medium bowl whisk together the blue cheese, lemon juice and olive oil.
  2. Serve this over a spinach salad with rings of fresh red onion.
  3. Whisk in the sour cream and you've got a dip for buffalo chicken wings or celery sticks.
  4. Stir in the horseradish and the mixture makes a great spread for sandwiches.
