Zesty Rice with Chorizo

1 tablespoon vegetable oil

1 package (3 1/2 ounces) chorizo sausage, cut up

1 medium onion, chopped

2 cloves garlic, minced

3/4 cup uncooked regular long-grain white rice

1 3/4 cups Swanson® Chicken Broth

1/2 cup Pace® Chunky Salsa

1/2 cup frozen peas

Chopped fresh cilantro leaves


  1. Heat oil in a 10-inch skillet over medium-high heat. Add sausage, onion and garlic and cook until vegetables are tender, stirring frequently.
  2. Stir in rice, broth and salsa. Heat to a boil. Reduce heat to low. Cover and cook for 15 minutes. Stir in peas and cook, covered, 5 minutes or until thoroughly cooked. Stir in cilantro.
  3. Swanson Kitchen Tip: This recipe is also great using Swanson® Natural Goodness™ or Certified Organic Chicken Broth in place of the regular chicken broth.
