10 Ways to Use Up All That Zucchini
Every summer I’m faced with buckets of zucchini coming from the patch in my backyard, so you know I’m always on the lookout for excellent zucchini recipes. Here are 10 of my very favorites. Almost all of them have been kid-tested (and tested and tested …), and there are a few that look so delicious they’re already at the top of my list to try next. Want to join?
Zucchini Parmesan (pictured above)
If you love eggplant parmesan, you’ll love this. It’s that simple.
By combining a handful of pantry staples with one fresh zucchini, I get an easy, cheesy side dish with nary a complaint from the kiddos.
Hands down, these are my family’s favorite zucchini muffins. The applesauce keeps the muffins moist and adds natural sweetness, so you don’t need as much sugar as typical zucchini-muffin recipes call for.
Buttery onions and zucchini are sauteed until soft, smothered in Gruyere cheese and fresh croutons before baked to perfection.
If your family likes the flavor of pasta with meat sauce (and, really, don’t we all?), pair these zucchini boats with a big loaf of buttery garlic bread and call dinner D-O-N-E.

That’s right. It’s Rachael Ray’s vegetarian chili, full of juicy chunks of zucchini, rice and even spinach. It’s so light and fresh — really the best (only?) way to serve chili this season.
