What I Tested

The butcher sources these birds from Diestel Turkey Ranch, a producer in California known for a wide range of natural and organic fowl. These turkeys are raised without antibiotics and feast on an all-vegetarian diet with minimal processing. My turkey arrived frozen in a vacuum-sealed package and wrapped in an insulated box packed with dry ice.

How I Tested
Once I unboxed the turkey, I took temperature readings to make sure that appropriate handling of a raw food item had occurred before reaching my door. I looked over any included manuals to look for information on thawing or cooking.
Thaw Test: The packaging suggested thawing for about three days, and that timeline proved to be accurate. After 72 hours in the refrigerator, the turkey was evenly thawed with no icy spots or excess liquid in the bag.
Prep & Cook Test: I followed the same standard recipe I used for all the uncooked birds in my overall turkey review. After sprinkling with the brine and allowing for a room temperature rest, I roasted the turkey at 325°F until a thermometer inserted into the deepest part of the thigh registered 165°F, basting as needed. After roasting, I let it rest for 45 minutes before carving and tasting.
Taste Test: I tasted parts from all over the turkey, from the white breast meat to the tender dark meat, as well as bites of skin for various areas.

My Review of Rastelli's Whole Turkey
Packaging: The turkey was impressively well-packed and arrived completely rock-solid frozen with plenty of dry ice left in the box. The giblets were included in a pouch inside the cavity, and the legs were secured with a plastic lock hock to save me the trouble of trussing.
Appearance: Before cooking, the raw skin looked clean and fresh with no tearing or discoloration. The leg meat had a deep red color that is ideal for a turkey and something you'll only see with free-range turkeys. After roasting, the skin became uniformly golden-brown and crisped nicely all over.
Prep & Taste: The turkey thawed exactly on schedule, though the interior thawed more slowly than the exterior. The flavor was mild and pleasant, though not as complex and nuanced as some high-end heritage breed turkeys can be. The white meat was a tad on the dry side and leaned heavily towards breast meat. Still, it produced plenty of flavorful drippings and was delicious overall, especially with gravy.
Price and Value: At around $99 (often less, look for flash sales) for an 8-10 pound turkey, this is one of the more affordable turkeys you can find anywhere, locally or online. Considering the overall quality, this is a strong pick for budget-minded cooks who could use the convenience of not having to shop for one more tricky ingredient.
