Preheat the oven to 400 degrees F. 

Toast the leftover bagels on a cookie tray in the oven until crispy, 5 to 6 minutes. Toss the bagels, cucumbers, onions, olive oil, vinegar, basil and tomatoes together in a large salad bowl.
