Cucumber Salad

1 hot house cucumber, thinly sliced, or shaved

1 tablespoon fresh lemon juice

2 tablespoons olive oil

Kosher salt

Freshly ground black pepper


  1. Put the cucumber, lemon juice, and oil in a small bowl, and toss. Season with salt and pepper, to taste.
