Mix the beef, onions, garlic, curry powder, 1 teaspoon salt and 1/4 teaspoon pepper in a large bowl until combined. Place the ground beef mixture into a gallon-size zip-top bag. Pat it down flat into the size of the bag.
Fill a large bowl with cold water. Carefully lower the bag into the water and seal it, leaving about a 1-inch opening. Submerge the bag into the water, pushing all the air out and making sure no water gets into the bag. Fully seal the bag.
Lay the sealed bag on a flat surface. Portion the ground beef mixture into 4 equal rectangular patties by pushing chopsticks or a ruler down the middle of the bag. Label and date the bag and store in the freezer for up to 3 months.
