1 1/2 ounces blanco tequila, such as Don Julio Blanco
1 ounce fresh lime juice
1 ounce agave nectar
1 pasteurized egg white
1 slice jalapeno with 2 or 3 seeds
Lime wedge, for garnish
Put the tequila, lime juice, agave, egg white and jalapeno in a cocktail shaker and muddle the jalapeno. Add large ice cubes, shake vigorously and single-strain into a rocks glass over fresh ice. Garnish with a lime wedge and serve.
