Grilled Cabbage Wedges with Buttermilk Ranch

Cabbage is one of the most unappreciated vegetables, in my opinion. Grilling wedges of cabbage adds another dimension of flavor, and topped with my homemade buttermilk ranch? — Whoa cousins, you're in for a treat!



Buttermilk-Ranch Dressing:

Miss Brown’s House Seasoning:


Special equipment:
a grill pan
  1. For the cabbage: Place an oiled grill pan over medium-high heat until hot. Place the cabbage wedges on the grill pan and sprinkle with the seasoning.
  2. Grill the cabbage wedges, in batches if necessary, until the edges begin to char and the cabbage begins to soften, 5 to 6 minutes on each side. Remove the cabbage to a platter.
  3. For the buttermilk-ranch dressing: Whisk together the buttermilk, mayonnaise, parsley, House Seasoning, lemon zest, lemon juice, dill and dry mustard in a small bowl. Season with salt and pepper.
  4. Drizzle the desired amount of dressing over the cabbage and sprinkle with parsley before serving.

Miss Brown’s House Seasoning:

Yield: 5 teaspoons
  1. Stir together the garlic and onion powders, paprika, salt and pepper in a small bowl. Store in an airtight container.

Cook’s Note

Don’t remove the core of the cabbages so that the wedges will remain intact.
