Honey-Infused Mediterranean Yoghurt Parfait with Stewed Plums and Peaches

2 cups thick Greek yoghurt

1/4 cup honey, plus more for garnish

1/4 cup raw sugar

1/2 teaspoon lime zest

1/4 teaspoon ground cinnamon

1 star anise

1 vanilla bean

4 plums, pitted and quartered

2 peaches, pitted and quartered

1/4 cup walnuts, toasted and roughly chopped


  1. Mix together the yogurt and 2 tablespoons honey in a bowl until blended.
  2. Stir together 1/4 cup water, the sugar, remaining honey, zest, cinnamon, star anise and vanilla bean in a saucepan over medium heat. Add the plums and peaches and cook until saucy and tender, 8 to 10 minutes. Remove from the heat and chill until cold.
  3. Layer the stewed fruits and yoghurt in a tall glass. Finish with a dollop of yoghurt, garnish with walnuts and drizzle with honey.
