Patate al Forno: Baked Potatoes

1 1/2 pounds potatoes, peeled, thinly sliced

4 fresh basil leaves, chopped

4 fresh sage leaves, chopped

1 sprig rosemary, chopped

2 cloves garlic, chopped

Salt and freshly ground black pepper

1/2 cup extra-virgin olive oil


  1. Preheat oven to 400 degrees F. Put the potatoes in a roasting pan and sprinkle with the basil, sage, rosemary and garlic. Season with salt and pepper, to taste. Drizzle extra-virgin olive oil on the potatoes, put the roasting pan in the oven and bake until golden brown and tender, approximately 45 minutes.
