Ruthie's Zucchini Rounds

Ingredients

2 medium zucchini cut into 1/4 inch rounds

2/3 cup bread crumbs

1/3 cup Parmesan cheese

1 cup flour

2 whole eggs

2 tablespoons butter

Directions

  1. In a shallow dish , combine bread crumbs and Parmesan cheese; set aside. Place flour in shallow dish; set aside. Beat two eggs in shallow dish and set aside.
  2. Heat 2 tablespoons butter in skillet over medium heat.
  3. Season zucchini rounds with salt and pepper. Dredge in flour, beaten egg, then bread crumb mixture. Saute until golden brown.
