Mucho Ultima in Manhattan Beach, Calif., is looking for a new executive chef to help re-brand it as a destination restaurant. Anne Burrell brings in four chefs. First, she tests their knowledge of Mexican chiles, then the chefs are tasked to reinvent the taco. The two chefs that remain are each handed the keys to the restaurant for one dinner service. One chef struggles to keep pace in the kitchen while the other runs out of ingredients in service. Only one gets the job and becomes Mucho's next executive chef.

In Jackson, Wyo., the California chef bringing his brand of legit Mexican to the mountains, like savory chicken sopes and one of Guy's favorite dishes, posole. In Carmel, Calif., Cooking Channel host G. Garvin is along for the ride at an authentic Italian joint dishin' out tri-color cannelloni and fresh seafood cioppino. And in Long Beach, Calif., the artistic chef serving up signature veggie sammies and a spin on pig and grits.

Rocco DiSpirito is inspired by Italy and makes crunchy Flatbread with Stracchino then travels east for Japanese-Style Street Meat using a custom binchotan grill. Traci Des Jardins mixes things up with a Bun Bowl and fried Churros with Mexican Hot Chocolate Spice Mix. Aaron May recalls a rainy day in London with delicious Fish and Chips and goes underground with a black-market Nutcracker. Jet Tila fills his plate with some Filipino-style Lumpia Eggrolls and a Pork and Pate Banh Mi.
Guy Fieri jumps on the farm to table bandwagon and cooks a Mexican-inspired meal with local celebrity chef Duskie Estes. First up, Al Pastor Tacos -- pork shoulder in a pineapple-chipotle marinade served with corn tortillas, Roasted Tomatillo Avocado Salsa and diced grilled pineapple. On the side, Tex-Mex Rice, with fire roasted tomatoes, sweet corn and diced carrot. And wait until you see Chef Duskie's Backyard Gigante Beans and Pumpkin -- a sweet-savory dish finished with squash blossoms and papalo -- this is a side that takes center stage.
In honor of family vacation memories, Guy Fieri is cooking up some Mexican food, starting off with his Stuffed Snapper Veracruz. Beautiful pink snapper stuffed with a savory mixture of onions, tomatoes, chilies, capers, olives and oregano. Top it off with crispy tortilla strips and a squeeze of fresh lime, and chase it down with a cold beer ... what more could you want? How about a salad? Guy's making a Red Quinoa and Citrus Salad, packed with orange segments, jicama, red onion and toasted almonds in a cilantro-lime dressing.
