I LOVE cassoulet. Traditional duck cassoulet takes a turn here with some Hawaiian inspiration, utilizing smoked pork belly and a piquant, herby condiment to accent the rich bean stew. I use canned beans any time I don’t have two days to soak and cook beans; it’s a shortcut that still delivers on flavor and creamy texture. The pineapple salsa verde is also a sauce that I literally put on everything: vegetables, meat and seafood!

A soufflé doesn’t have to be intimidating to make, but if done successfully, it is a showstopper (or “The Closer” as I term it at my Maui restaurant Papa’aina). Enter the gloriously tart and refreshing tropical flavor of passionfruit a.k.a. lilikoi in Hawaiian terminology. Lilikoi is far and away my favorite flavor and fruit, and we have at least 4 or 5 varieties growing here in Maui. Floral, tropical and intoxicating would be words to describe the aroma. The pulp and juice are prized, but I also love using the seeds when fresh lilikoi is available. Here, an easy 12-minute soufflé gets the royal treatment in an unexpected vessel: the cast-iron skillet.

This is a chef’s drink, no doubt. The name has had several incarnations at my restaurants over the years: “Total Domination…” It is currently on my Maui menu as “Ships in the Night.” Spirit-forward and totally sophisticated, it requires a solid two minutes of stirring over ice to chill and dilute the cocktail to the perfect texture and consistency. Try to have just one.

In 2014, my dumpling cookbook “Dumplings All Day Wong” was published, a tribute to my love of Asian style dumplings. This dumpling combines all of my favorite things: rich delicious lamb, with the sizzling tingle of spicy Szechuan flavors, and creamy and herbaceous accents of garlic yogurt and coriander, all in a composed dumpling dish sure to please the masses!

When it comes to layering, there is no better example than a Pousse-Cafe cocktail. It might be old school technique, but the layering is as fresh as the latest Tik Tok trend. Laughing Man is my favorite local coffee shop and a Black and Tan is my favorite go to casual drink. This cocktail is a mash up of the two.

The Dubliner

I've been known to devour this popular restaurant appetizer by the plateful. Biting into cheesy poppers and having the jalapeno heat explode in my mouth is an experience all its own. Usually, these snacks are made with just bacon and cheese, but I couldn't help adding fresh clams. I've wrapped them in bacon and baked them to perfection. Only 3 grams of carbs will pass your lips with these treats.

For the really hungry, really thirsty, brunch loving, burger obsessed, big drink lover, comes the Giant Bloody Mary. Garnished with the kitchen sink and more, this tall drink of vodka and other spirits is sure to lift the spirits of anyone who crosses its path. The use of heavy machinery is not recommended.

Lobster is unlike other fish or meat; it is very hospitable to exotic flavors. This sweet and sour bell pepper sauce is just wacky enough to be interesting, but not so much that it detracts from the sweet and rich taste of the lobster. The rosemary and savory spices in the flour mixture help balance the dish.

From the Emilia Romagna region of Italy, this lasagna has cured many poor spirits here stateside. Delicious as the original may be, my multi layered version, packed with veggies, addresses each area carefully to yield a dish you enjoy guilt free.

Few dishes are as soul-satisfying and luxurious as a buttery-rich potato puree or mashed potatoes. I love mashed potatoes, but I know that they're not particularly good for me. Cauliflower puree makes a truly superb substitute.
