Avocado Salsa

1/4 small red onion, finely diced (about 1/4 cup)

1 small clove garlic, finely chopped (about 1 teaspoon)

1 small jalapeno pepper, finely diced (about 1 tablespoon)

2 tablespoons lime juice

Kosher salt

2 avocados

2 teaspoons extra-virgin olive oil


  1. Combine the onion, garlic, jalapeno, lime juice and 1/2 teaspoon salt in a bowl. Set aside. Peel and pit the avocados and cut into 1/2-inch pieces. Gently stir the avocado and oil into the bowl until the avocado is dressed.
