Citrus-Beer Dressing

2 teaspoons stone-ground mustard

1 tablespoon agave nectar

1 tablespoon minced shallot

1 teaspoon finely grated orange zest

1 teaspoon finely grated lime zest

1/2 cup pale ale beer

1/2 cup extra-virgin olive oil

Kosher salt and freshly ground pepper


  1. Whisk together the mustard, agave, shallot and orange and lime zests in a medium bowl. Slowly whisk in the beer until combined. Slowly drizzle in the oil, whisking constantly, until emulsified. Season with salt and pepper. Serve with salad.
