Easy Marshmallow Eagle Cookies

What you’ll need:

  • Marshmallows
  • Vanilla Frosting
  • Sweetened Shredded Coconut
  • Mini Chocolate Chips
  • Banana Candies
  • Chocolate Covered Sandwich Cookies

How to:

  1. Spear your marshmallow with a fork.
  2. Use an offset spatula to spread a thin layer of vanilla frosting to cover marshmallow.
  3. Sprinkle sweetened shredded coconut over marshmallow until completely covered. Use your finger to press the coconut into the frosting.
  4. Cut a slit into the marshmallow and press 2 banana candies into the slit to create the “beak”.
  5. Press two mini semi-sweet chocolate chips into the marshmallow to create the eyes.
  6. Use vanilla frosting as glue to attach the "eagle" to the top of a chocolate covered sandwich cookie.
