Sweet news for bakers pressed for time: Milk Bar, the beloved New York City bakery chain founded by renowned pastry chef Christina Tosi, is releasing a new line of baking mixes for at-home baking.

The first three mixes will be available online for nationwide shipping starting today, Monday, May 11, and I got a chance to try all of them out in advance. It was a sweet feast.

What’s in Milk Bar’s new line of baking mixes?

The line consists of three new “home-kitchen-friendly” mixes offering “bold twists on nostalgic flavors," according to the brand:

  • Chocolate Chunk Cookie Mix: This gluten-free chewy chocolate chunk cookie mix is made with oat flour and real chocolate chunks. It requires the addition of a stick of unsalted butter and one egg, and it can also be used to make muffins, blondies or a cookie cake. “Drop, bake and enjoy the same crackle-edged, gooey-centered cookie that put Milk Bar on the map,” the brand promises.
  • Confetti Cake Mix: This vanilla cake mix has rainbow sprinkles baked right in, perfect for birthday celebrations, and requires just milk, vegetable oil and eggs. It can be made a day ahead, as a square cake, sheet cake, round layer cake or cupcakes, and pairs with a frosting recipe listed on the packaging.
  • Gooey Brownie Mix: This classic brownie mix features real chocolate chunks and cocoa, calls for the addition of a stick of unsalted butter and two eggs, and can also be used to make brownie cookies or a chocolate cake. The brand describes it as “intensely chocolatey, fudge in the center, with that paper-thin crackle top that signals a great brownie.”

My honest review of the new Milk Bar baking mixes:

For starters, these mixes will for sure save you time and effort. Each of them called for additional ingredients you are very likely to have on hand — eggs, milk, oil and butter — and take less than five minutes (for real) to mix up.

The Chocolate Chunk Cookies bake up to crunchy-chewy perfection in under 15 minutes and are amazing pretty much straight out of the oven; I loved the texture and the plentiful chunks of chocolate.

The Confetti Cake Mix, in my hands, didn’t look anything like the fluffy white cake on the front of the package, alas, but it tasted appropriately birthday-like. I was surprised to find it sweet but not as extremely sweet as I expected.

The Gooey Brownie Mix was a true revelation. Intensely rich and fudge-y inside, with chunks of chocolate to boot, and perfect bite, thanks in large part to what the package calls the “flint” on top: “That paper-like crackle top that great brownies have is called 'FLINT,'” Milk Bar says in a “pro tip.” The brand suggests using a plastic knife and “short sawing motions” when you cut the brownies while they are still warm in order to maximize flint. I used a regular knife, but I was more than satisfied with the flint on these brownies — and everything else about them. I could absolutely see keeping packages of this mix in the pantry to impress dinner guests with delicious fresh-baked brownies made with ease.

Where can you get Milk Bar’s new baking mixes?

Starting today, Monday, May 11, the mixes are available online at milkbarstore.com and at Milk Bar’s NYC flagship store (1196 Broadway at 29th Street). They are new permanent menu items, not limited-time only.

The Chocolate Chunk Cookies are priced at $13.99 per package, while the Gooey Brownie and Confetti Cake mixes are $12.99 each.
