3 lbs. sweet potatoes

2 Tbs. STAR Balsamic Vinegar

1 Tbs. chopped fresh thyme

3 Tbs. STAR Extra Virgin Olive Oil

Salt and pepper to taste


  1. Pierce potatoes in several places with fork. Place on baking sheet and bake at 425 degrees F until soft, about 1 hour, depending on size. When cool enough to handle, peel potatoes and place in large bowl. Add remaining ingredients and mash until smooth.;
