The 10 Best Bites of the 2015 South Beach Wine & Food Festival
The 2015 South Beach Wine & Food Festival wrapped up mere hours ago with an over-the-top tasting at The Best of the Munchies: People's Choice Food Awards, and while the FN Dish team packed in more fried, glazed, grilled and cheesed dishes in four short days than we thought possible, we're already craving just a few more bites of our very favorite dishes from the weekend. When you walk into an event and see an oversize whole-hog smoker parked in the center of the beach, you can bet that the food being served there will be authentic. That was the scene at the Martin's Bar-B-Que Joint booth during Meatopia, and sure enough, the soft, buttery pork did not disappoint, and the addition of a spicy vinegar sauce was particularly satisfying.
Brunch never looked better than it did when the team from Leoci's Trattoria, in Savannah, Ga., handed over this down-home plate of hearty polenta and fork-tender short ribs. We were especially drawn to the beets, which guaranteed a layer of freshness.
8. Guy Fieri's Four-Hour-Roasted Pork with Mojo, Jicama Slaw and Chili-Lime Chicarones
With a pita bread base and slow-roasted pork as the all-star element, plus crunchy slaw, a trio of sauces and a chicarones side dish, Guy's Meatopia offering was true next-level 'cue.
7. Duff Goldman's Old-Fashioned Chocolate Malted Shake
Leave it to Food Network's own cake master to create the best sweet bite of the festival. Cool, creamy and comforting, Duff's whipped cream-topped shake was a fitting pairing to the meaty dishes at Burger Bash.
A traditional grilled cheese is a classic for a reason, but Atlanta's Holeman and Finch Public House managed to improve upon the tried and true by swapping in pimento cheese for ordinary cheddar. A bacon-pickle salad rounded out the sandwich with both briny and sweet tastes.
Everything you crave in a chicken Parmesan — the tender meat, melty cheese and sweet tomato sauce — was put into meatball form, thanks to the team at Quality Italian. We snagged an extra-generous drizzle of Calabrian Chile Honey on top, and for that we're grateful.
Don't let the name fool you: The rich meaty flavor coming from STK Miami's Wagyu sliders was far from little, and we think that has a lot to do with what the team there calls its "Special Sauce."
3. Gabriele Corcos and Debi Mazar's Pasta alla Gricia
Gabriele told us he loves this pasta because of its rustic history — it takes only four ingredients to make it — and we love it for its bold garlic flavor and the welcome saltiness from the guanciale.
Josh Capon's now-infamous burger took home the Judges' Choice trophy at this year's Burger Bash, and in the past it's earned the chef a whopping five wins at New York City Wine & Food Festivals. It's a sure-fire hit for a reason: The bacon-onion jam is at once sweet, salty and rich, and when paired with the pickles and the juiciness of the beef, it's everything we want in a burger.
Yes, you read that correctly. Gooey, cheesy macaroni was bundled inside the crispy skin of a chicken wing, all tossed in a Buffalo Garlic Parmesan Sauce. While we expected this wonderfully messy bite from Sauced Up Food Truck, out of Coral Springs, Fla., to be heavy, it was shockingly light — so light, in fact, that we contemplated having a second one. And a third.
