This southern fried fish is a recipe you’ll come back to time and again, thanks to the crispy cornmeal fried snapper and creamy coleslaw. Fish fillets get dipped in a flour and cornmeal mixture that is well seasoned with a Cajun spice blend. Then they’re pan-fried until golden and crispy. Serve with a flavorful coleslaw of mayo, apple cider vinegar and celery seed that’s reminiscent of a creamy remoulade sauce.

This taco soup is a marriage of soup and chili in the best way possible. Ground beef and fresh chorizo get browned and simmered with chili powder, cumin and paprika until fragrant. Then fire-roasted tomatoes and mild green chiles are stirred in for a Tex-Mex twist. Quickly whip up jalapeño and Cheddar cornbread muffins to serve on the side, and top with sour cream, cilantro and some diced avocado for a hearty, family-friendly meal.

Of all the wing recipes I've ever created for my game-day parties, this is definitely the crowd pleaser--it always seems like I never make enough! I like to marinate the wings a day in advance so all the flavors have a chance to fully come together, then I cook them an hour before kickoff.

A friend of mine has a Mediterranean food truck called Pitas Bites at my beer garden in Houston, Texas, Rosehill Beer Garden, and I swear, he makes the best hummus I've ever had. Imported olive oil helps him keep his menu as authentic as he can. Over time, he has shared a few of his recipes, but his hummus stays under lock and key. I've tried at least a dozen times to no avail to crack the code, and so I decided to create my own sacred hummus recipe with a little Tex-Mex flair, but instead of keeping it top secret, I am sharing it here with you.

Cornbread dressing is a staple of the Southern Thanksgiving celebration. I make mine with the holy trinity (green peppers, onions and celery) and lots of fresh sage and thyme. While most dressing recipes call for the bread to be toasted, here it just needs to be at room temperature. However, if you would like to start with day-old bread, that works too!
