  1. In a large punch bowl, steep 1 cup pineapple chunks in 750 ml cognac for an hour or two in the refrigerator. Add 2 1/2 cups seltzer or club soda and 1/4 cup superfine sugar, stirring until the sugar is dissolved, then add between 375 ml and 750 ml cold demi-sec champagne.
