Celebrate Hanukkah with a latke board that’s bursting with all the classic trimmings — and then some. We offer many suggestions for sweet and savory toppings and sides to include, so choose favorites or go big and serve them all. Our easy latke recipe makes about 36 small ones, but they go fast so we suggest adding some sturdy kettle chips as a backup potato option. If you plan on making the latkes right before serving, you’ll want to assemble the board ingredients first, keeping perishables like smoked fish refrigerated, then fry the latkes, place everything on the board and serve. Cooking the potato pancakes in two skillets streamlines the process, but you could also do it in just one skillet if you prefer. And if you want to make the latkes earlier in the day you can reheat them for a few minutes just before serving (see Cook’s Note).

Taking our inspiration from egg-yolk-filled raviolo, we tried stuffing a classic latke with an egg and found the crunchy exterior played along perfectly with the creaminess of a runny yolk. We added a dash of cayenne to cut through the richness and chives on top for a bright and herby finish. If you are nervous about handling an egg yolk without breaking it, try this trick: place the yolk in a small glass or teacup and gently pour it into the well of the potato mixture.

Rich, sweet babka is most often flavored with cinnamon or chocolate, and it’s usually baked in a loaf pan. Here we decided to take inspiration from round jelly doughnuts and bake this bread in a circular springform pan. We love raspberry jam in this, but feel free to use whatever flavor is your favorite — just be sure it’s thick enough to hold its own against our classic buttery babka dough.
