Indian Spiced Tri-Tip Tacos with Caraway Basmati Rice and Tangy Tomato Sauce

I don't know why it is, but I am not a fan of American-style omelets. I love eggs scrambled, coddled, poached, soft and hard boiled . . . but there's something about that thick carpet of egg in omelets that just doesn't sit right with me! Perhaps it's because this is the first omelet I ever had- thin (but not as thin as a crepe-like French omelet) and packed with fresh flavors. It's the kind of thing I whip up at almost any hour of the day (it's really great after you've been out and had one drink too many!). To this day, Mum will make this as a light lunch when she doesn't feel like cooking anything too strenuous. The potato chips are my American touch to this Indian standby.

This recipe is inspired by the leg of lamb my mum would make every Christmas, “Masala Raan” (masala means spice mix; raan means the leg of an animal, usually mutton, goat or lamb). It was an extensive affair involving a two-day process and two separate marinades, one of green papaya and salt to tenderize the meat, then a second yogurt-based one to flavor it. Cashews and fried onions were used to enrich the marinade, adding buttery richness and a pronounced umami sweetness. The dish is said to have been served by Alexander the Great to a defeated king in India as a sign of goodwill and friendship. Seems pretty appropriate for a Christmas table! Here’s my simplified version using quick-cooking rack of lamb; I decided to turn the cashews and fried onions into a delectable crust. I also added a bright, minty relish with a sour pucker from the barberries—and happily, it mirrors the traditional colors of Christmas, green and red.

There are entire shops dedicated to this snack mix in India, and it's one of our treasured snacks. The last time I was in India, we all walked to a neighborhood pub, ordered a pitcher of beer, and chowed down on a big bowl of Chewda. It usually consists of chickpea flour noodles, flattened flakes of dried rice, peanuts and seasonings. Here's my Americanized version. Careful. Once you start... it's really hard to stop!
