Cheesy Sausage and Potato Breakfast Casserole

Ingredients

2 packages (12 ounces each) Johnsonville® Cheesy Breakfast Sausage Links

1 package (20 ounces) frozen roasted potatoes

1/2 cup chopped onion

1/2 cup chopped green pepper

2 cups (8 ounces) shredded cheddar cheese, divided

9 eggs

3 cups milk

1 tablespoon Dijon mustard

1/4 teaspoon salt

1/4 teaspoon pepper

Directions

  1. Cook sausage according to package directions. Cool slightly; cut into 1/4-in. slices. 
  2. In a large bowl,combine the sausage, potatoes, onion, green pepper and 1-3/4 cups cheese. 
  3. Spoon into a greased 13-in. x 9-in. baking dish. 
  4. Combine the eggs, milk, mustard, salt and pepper. Pour over sausage mixture. 
  5. Sprinkle with remaining cheese. 
  6. Bake, uncovered, at 350 degress F for 45-50 minutes or until a knife inserted into the center comes out clean. 
  7. Let stand 5 minutes.
