On Sundays, a wholesome culinary experience regularly occurred between a young Eric Adjepong and his father, Benjamin, inside a yellow taxi. They zoomed by New York City staples and ate delectable meals along the way. From Madison Square Garden to The Bronx Zoo, they traversed the boroughs and made up for lost time. On their journeys, a recurring guilty pleasure for Benjamin was Burger King’s onion rings.

In honor of his father's recurring snack of choice, Eric developed a recipe for onion rings in Ghana to the World: Recipes and Stories That Look Forward While Honoring the Past. Calling it "by far the most personal recipe and headnote in the book," Dad’s Onion Rings With Zip Sauce are light crinkles of nostalgia tossed with cornstarch for an airy batter, then enhanced with a coating of flour and panko for a light crunch.

Everyone Gets a Piece of Your Impact

Eric's father passed away in 2005. When his grandmother, with whom he lived on his very first trip to Ghana, passed away in 2011, he traveled to Ghana for the first time as an adult. Eric was able to connect with his family while visiting his grandmother's and his father's graves. He saw his lineage reflected across his cousins and family members when they came together to celebrate their loved ones' impact.

Though he wishes he could have had more time, more cab rides and more meals with his father, "That experience helped shape how I am as a father to my daughter and how I talk to everyone I meet," writes Eric.

Dad's Onion Rings connect Eric's fond memories with his father. "I'm so thankful for those Sunday car rides," Eric says. "In retrospect, those few hours each Sunday helped shape my point of view on food today because they showed me different cultures and how delicious food can come from anywhere."

Everyone who tries a bite now gets a piece of Eric and Benjamin Adjepong striking through the city in a yellow taxi.
