For any steak, it's critical that it's at room temperature before you start, so that it cooks evenly throughout. And when seasoning steak, use more salt and pepper than you think is needed on all sides of the meat. Seasoning raw meat aggressively takes some getting used to, but doing so will take your steak from average to restaurant-worthy.

When you have the chance to order in a meal, always save the leftover containers of steamed rice. The best way to make fried rice is with day-old steamed rice. I regularly make this for breakfast, and even the kids approve, as it has eggs and a bunch of whatever leftovers are in the fridge. Once you learn the basic method of frying the rice, experiment by adding your own choice of vegetables.

Once you learn the fundamentals of braised short ribs, you can experiment with different vegetables, herbs and spices. I included two umami flavor boosters here, anchovies and tamari, but you can omit them if you don't have them on hand. You will still have a classic, rich and delicious meal to keep you warm through winter. My pommes puree is loaded with butter and milk, but the real key is using Yukon gold potatoes. This is the last thing I do when serving a big holiday meal, because they have to be eaten right away. And remember, serve warm and not piping hot, because if they get too hot, the butter will separate.

The flavor of this dish begins with really seasoning the lamb in advance. Let the garlic harissa paste sink in overnight and don't rush the cooking time and you'll be rewarded with a flavorful and tender lamb dish that is incredibly comforting.
