This salad is like one big antipasto. I love the combination of the garlicky, salty salami and spicy pepperoncini, cooled by the provolone cheese and paired with the crisp iceberg lettuce. I make the vinaigrette heavy on the vinegar--equal parts vinegar and oil--because the acidity helps balance the strong flavors of the salad.

You will never look at pancakes the same way again. It truly doesn't get any easier than this. Pancakes on a weekday before work or getting the kids off to school? No problem! They can be done in about five minutes. They are healthy, full of fiber and protein, and you can give them more of a boost by adding some flax seeds or chia seeds. I've found that if I use Greek yogurt instead of cottage cheese, I sometimes need to add a tiny splash of milk to the batter; yogurt will also make for a slightly denser, more protein-rich pancake.

Feeling stressed? Eat this salad. No seriously: Farro has a high magnesium content, which can help relieve tension. It’s also really high in fiber. Butternut squash is often found pre-cut in supermarket produce sections, and starts popping up at farm stands toward the end of the summer. This recipe is also delicious in the fall using pumpkin or other autumn squash varieties.

We love ribs at the Biegel house. My husband, Ryan, taught me this method of wrapping the ribs tightly in foil and starting them at a high heat before lowering the temperature for low and slow cooking. The peach preserves and jalapeño are the perfect combo of salty, sweet and spicy.

We have “taco Tuesday” every week, and this is my go-to recipe. The lentils are totally hidden from my detective-daughter, Iris. Adding lentils is a great way to introduce different flavors, add nutrients and stretch the beef to make more for less of a cost.
