Two 1 1/2- to 2-pound lobsters, split down the middle and claws cut open
5 tablespoons salted butter, softened
6 hot dog buns
1/4 cup mayonnaise
1/2 lemon, juiced
Preheat a grill until very hot.
Lay the lobsters on the grill cut-side down and grill for 1 minute to get a little char. Flip the lobsters over and spread 4 tablespoons of the butter over the tail meat and in the cut claws. Grill until the lobsters are just cooked through, another 2 minutes. Set aside to cool.
Butter the outsides of the hot dog buns with the remaining 1 tablespoon butter, then toast them on the grill until golden brown, about 1 minute per side.
Remove the lobster meat into a bowl, cutting or tearing any large pieces, and dress with the mayonnaise, lemon juice and some celery salt. Open the buns, scoop the meat into them and serve warm.
