Almond Butter Banana Bites

Nutty, fruity and covered in chocolatey goodness, these little treats are all sorts of yummy.

2 cups almonds, toasted

1/4 cup coconut oil, melted and divided 

2 tablespoons honey (optional) 

1/2 teaspoon sea salt 

1 cup dark chocolate, chopped (60 percent cacao) 

3 bananas, peeled and sliced into 1/4-inch-thick coins 

Toasted chopped almonds, for garnish  

Optional Toppings:

Coarse sea salt

Crumbled crispy bacon  

Marshmallow bits and crushed graham crackers


  1. Line a baking sheet with parchment or wax paper.
  2. Place the 2 cups almonds in a food processor and process on high speed, scraping down the sides as necessary, until smooth. Stream in 2 tablespoons of the coconut oil and process again until desired consistency is reached. Season with salt and honey, if using. Set the almond butter aside. 
  3. Melt the chocolate with the remaining 2 tablespoons coconut oil, either over a double boiler or in a microwave until smooth. 
  4. Take each banana slice and spread with a heaping teaspoon or so of the almond butter. Top with another slice of banana. Freeze the "sandwiches" until they firm up then dip each one in the melted chocolate. Gently turn with a fork to coat evenly and let the excess drip off before placing on the prepared baking sheet. 
  5. Garnish with toasted chopped almonds or your desired toppings, as follows: 
  6. For Salted Chocolate: top with a pinch of coarse sea salt.  
  7. For The New Age Elvis: top with crumbled crispy bacon.  
  8. For Get S'more: top with marshmallow bits and crushed graham crackers. 
  9. Pop in the freezer to firm up. Save for later in the freezer or serve right away.
