Caramel Dip

Ingredients

1/3 cup coconut oil, in liquid form (not solidified)

2 tablespoons fresh lemon juice 

1 teaspoon pure vanilla extract 

1/2 teaspoon kosher salt 

2 cups pitted dates, soaked in water overnight and drained 

Directions

  1. Combine the coconut oil, lemon juice, vanilla and salt in a blender and pulse until incorporated. Add the dates and pulse until smooth.
  2. Transfer the caramel dip to a serving bowl.
