Healthy Badass Banana Bread

Packed with good-for-you ingredients like buckwheat flour and almond butter, this is banana bread you can feel good about.

1 1/2 cups mashed overly ripe bananas

2 large eggs  

3 tablespoons coconut oil, melted 

3 tablespoons pure maple syrup 

2 tablespoons almond butter, plus more for serving 

1 teaspoon vanilla extract 

1 cup buckwheat flour 

1/2 cup almond flour 

1/2 cup rolled oats 

2 teaspoons ground cinnamon 

Pinch of nutmeg 

1 teaspoon baking soda 

1/2 teaspoon baking powder 

1/2 teaspoon salt 

1 cup blueberries 


  1. Preheat the oven to 350 degrees F.
  2. Combine the bananas, eggs, coconut oil, maple syrup, the 2 tablespoons almond butter and the vanilla in a medium bowl and stir to combine. 
  3. Add the flours, oats, cinnamon, nutmeg, baking soda, baking powder and salt in a separate bowl. Whisk to combine. 
  4. Add the dry ingredients to the wet ingredients and mix together. 
  5. Line a loaf pan with parchment paper and add the batter, smoothing out the top with a rubber spatula. 
  6. Bake for 45 to 55 minutes or until the top is golden brown and a knife comes out clean when inserted. Allow to cool.  
  7. When ready to serve, slice the banana bread, spread it with almond butter and top with some blueberries.
