Japanese for "entrusting," the word omakase is often associated with sushi restaurants. In this venue it indicates "chef's choice" or "putting your trust in the chef." Omakase is essentially a tasting menu left up to the sushi chef, which sometimes requires an adventuresome spirit from the diner, and perhaps a fat wallet.
