Frozen Yogurt Granola Donuts

Ingredients

Granola:

2 1/2 cups rolled oats

3/4 cup sliced almonds 

1 1/2 teaspoons ground cinnamon 

1/8 teaspoon sea salt 

1/2 cup pure maple syrup 

1/4 cup coconut oil, melted 

2 teaspoons vanilla extract 

1/4 teaspoon almond extract

Frozen Yogurt Donuts:

2 cups plain Greek yogurt

3 tablespoons pure maple syrup 

1 tablespoon beet powder (for pink color) 

1 teaspoon vanilla extract  

Directions

Special equipment:
a 6-cavity donut pan
  1. To make the granola: Preheat the oven to 300 degrees F and line a large baking sheet with parchment paper.
  2. Combine the oats, almonds, cinnamon, salt, maple syrup, coconut oil, vanilla and almond extracts in a large mixing bowl, and stir until well coated. 
  3. Spread onto the prepared baking sheet and bake for 30 minutes, stirring every 10 minutes. 
  4. Allow the granola to cool completely for a crunchy texture. 
  5. To make the donuts: Sprinkle approximately 1/2 tablespoon of the cooled granola into each cavity of a 6-cavity donut pan. Set aside. 
  6. Combine the yogurt, maple syrup, beet powder, and vanilla extract in a medium sized bowl and stir well. 
  7. Divide the yogurt mixture equally into the donut pan and then sprinkle the granola on top. 
  8. Freeze 2 to 3 hours, or until solid.
