Goat Cheese Sun-Dried Tomato and Pine Nuts

1/2 cup (4 ounces) mild goat cheese

2 tablespoons sun-dried tomatoes

1 tablespoon basil, minced

1 cup pine nuts, toasted lightly and cooled


  1. In a bowl mash together the goat cheese, the sun-dried tomatoes and the basil. Form level tablespoons of the mixture into balls. (If the mixture is too soft to form, chill it for 10 minutes.) Coat the balls with the pine nuts, pressing the nuts into the mixture, and chill them for 20 minutes.;
